the quickest way to a man’s heart is through his stomach, then the one thing our clientele may savor as much as the entertainment is the food….sorry dancers! Thanks to our talented team of culinary professionals, The Men’s Club cuisine rivals fine-dining restaurants and top-notch steakhouses alike – and inspires almost as much passion for the plate as for the performers.

Keith Roybal graduated with honors from the New York Restaurant School, working an apprenticeship at a four-star restaurant on Manhattan’s Upper East Side. During his career Keith used the skills he honed to create variety menus for other four-star restaurants. Inspired by the art and use of different ingredients, Keith’s favorite things about cooking are being surrounded by fresh food, and the detailed preparation that goes on in the kitchen.
Keith’s advice to aspiring chefs: “Journey into the unknown and don’t look back. Give yourself to the craft.”

Chef Paolo Stoltz began his career-long affair with food as a boy in Italy. Brought up in a family so passionate about cooking and eating, his devotion to the culinary arts was destined to flourish. And it did. Chef Paolo was heavily influenced by his love for Italian food and by the fresh fare that his Grandmother and Mother created in their kitchens. From Italy to California to Texas and many points in between, Chef Paolo has had extensive experience in kitchens around the world.

The Men’s Club fine-dining experience adds something special to every encounter; business meetings, friends out for fun, couples on a date or any celebratory occasion.
